Ribollita is originally a peasant food, typical of the Tuscan countryside and follows the traditions of \u201c cucina povera\u201d: \u201cpoor man\u2019s food\u201d. Ribollita means &#8220;boiled again&#8221; and refers to the fact that the vegetable soup was prepared and then, the following day, before eating\u00a0 it was warmed up \u2013 boiled again. The idea was to use leftover bread and vegetable soup from the previous days. Ribollita is something that has been \u201cre-boiled\u201d because the vegetables soup is cooked again together with the stale bread over the fire or in the oven to make it &#8220;boil&#8221;. This procedure<\/span> <span style=\"font-weight: 400;\">marked the flavours making it even tastier with a drizzle of EVO oil.<\/span> <span style=\"font-weight: 400;\">The best is<\/span> <span style=\"font-weight: 400;\">eating it with a fresh spring onion.<\/span><span style=\"font-weight: 400;\"> The <\/span><span style=\"font-weight: 400;\">Ribollita is one of the most popular dishes of rustic Tuscan cuisine. Throughout<\/span> <span style=\"font-weight: 400;\">Tuscany every town has its own version, there is not a unique recipe, mandatory rule however includes beans and black Tuscan cabbage.<\/span><\/p>\n[\/et_pb_text][et_pb_image src=&#8221;http:\/\/www.visitvaldarno.com\/wp-content\/uploads\/2020\/01\/visitvaldarno-ricette-tradizionali-ribollita.jpg&#8221; _builder_version=&#8221;3.26.7&#8243;][\/et_pb_image][et_pb_text _builder_version=&#8221;4.5.6&#8243; hover_enabled=&#8221;0&#8243;]<p><strong>INGREDIENTS<\/strong><br \/> \u009f 400 gr. natural leavened Tuscan bread baked in a wood oven<br \/> \u009f 400 gr. beans<br \/> \u009fTwo cloves of garlic<br \/> \u009f200 gr. black cabbage<br \/> \u009f200 gr. Cabbage kale<br \/> \u009f2 carrots<br \/> \u009f2 or 3 potatoes<br \/> \u009fA bunch of local beets ( 1 bouquet chard)<br \/> \u009fTwo stalks of celery<br \/> \u009f6 or 7 small Tuscan tomatoes that hung are also preserved for the winter<br \/> \u009fExtra virgin olive oil<br \/> \u009fOnion to be used as a spoon<\/p>\n[\/et_pb_text][et_pb_text _builder_version=&#8221;4.5.6&#8243; hover_enabled=&#8221;0&#8243;]<p><strong>PROCEDURE<\/strong><br \/> 1. Soak the beans for 12 hours, in a terracotta pan, cover with water, add<br \/> a clove of garlic (you can also put a little sage) and no salt. Cook them in<br \/> wood-burning oven. If the beans tend to drain, add other boiling water in,<br \/> so that at the end the liquid is plentiful. Blanch the black cabbage in a little water add the chards and chop them coarsely, put them in an earthenware pan with chopped celery<br \/> chopped, diced potatoes, carrots in rounds, kale, small tomatoes and EVO oil.<\/p>\n<p>2. Fry , add the boiling water of the beans and cook over low heat until<br \/> The vegetables are well cooked. Put half beans through a vegetable mill and add the pur\u00e9ed beans to the pan with the vegetables and keep on cooking for another thirty minutes.<\/p>\n<p>3. Thin slices of stale bread are alternated in an earthenware pan with cooked vegetables and the whole beans making various layers and wetting with the cooking water. Put the pan so filled and covered in oven at low temperature (less than 150 degrees) better if<br \/> wood-burning oven.<\/p>\n<p>4.Mix from time to time to obtain a homogeneous ribollita that is eaten<br \/> with a drizzle of oil using as a spoon a red sheet of onion Savonese or Certaldo onion (a particularly sweet variety) dipped in a pile of salt placed next to each diner.<\/p>\n[\/et_pb_text][\/et_pb_column][et_pb_column type=&#8221;1_3&#8243; module_id=&#8221;sidebar&#8221; module_class=&#8221;sidebar&#8221; _builder_version=&#8221;3.26.7&#8243;][et_pb_sidebar _builder_version=&#8221;3.26.7&#8243; border_color_all=&#8221;rgba(0,0,0,0)&#8221;][\/et_pb_sidebar][\/et_pb_column][\/et_pb_row][\/et_pb_section]\n","protected":false},"excerpt":{"rendered":"<p>La Ribollita is one of those traditional dishes that identifies the Tuscans.
