Today it is one of the products par excellence of this land.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It prefers the harsh and poor terrain of the hill areas, considering that it doesn\u2019t tolerate the slightest stagnation of water or strong thermal excursion.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It\u2019s called \u201cZolfino\u201d because of its <\/span><b>pale yellow hue<\/b><span style=\"font-weight: 400;\">, akin to sulphur.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It\u2019s also known as beans <\/span><b>\u201cof the hundred \u201c<\/b><span style=\"font-weight: 400;\"> because traditionally sown on the \u201cGiorno del cento\u201d, the hundredth day of the year.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Fall harvested beans are left to sun-dry in the local farmyards before they are hand-cleaned and sorted, with only the best,( the production is very limited) flawless beans.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00a0Known for its refined, unique flavor the Zolfino bean doesn&#8217;t require soaking, <\/span><b>the fine<\/b> <b>thin skin<\/b><span style=\"font-weight: 400;\">, which &#8220;melts in your mouth&#8221;, makes it very digestible, as Artusi indicates in his recipe no 57.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Despite the very fine skin it requires a time-honored preparation method : slow cooking with low fire.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The dense\u00a0 creamy texture and its intense flavor make it particularly appreciated, it is an ideal companion of many dishes of Tuscan cuisine.<\/span><\/p>\n[\/et_pb_text][\/et_pb_column][\/et_pb_row][\/et_pb_section]\n","protected":false},"excerpt":{"rendered":"<p>These small roundish beans are typically found growing along the terraced hillsides in the Pratomagno region , in the midst of lush olive groves near the Seventeenth century road which follows the ancient path of the Cassia Vetus.
