In Greek mythology it is said that the God Hermes used saffron as an <\/span><b>aphrodisiac.<\/b><\/p>\n<p><span style=\"font-weight: 400;\">The cultivation of saffron belongs to the ancient past of Tuscany and today some companies in Valdarno carry on this tradition. Grown mainly in the<\/span><b> Setteponti and Valdambra<\/b><span style=\"font-weight: 400;\"> areas on the terraces among the olive trees.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">What we use to give unmistakable color and flavor to many dishes, is the red pistil of the <\/span><b>purple crocus flower,<\/b><span style=\"font-weight: 400;\"> which after being dissolved in water it takes on the known <\/span><b>yellow color<\/b><span style=\"font-weight: 400;\">. The bulbs are planted at the end of August and the flower picking begins around the end of September.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The harvest phase as well as the other parts of the manufacturing process are carried out strictly by hand, so as not to damage <\/span><b>the pistils<\/b><span style=\"font-weight: 400;\">, which are subsequently separated from the rest of the flower and then dried.<\/span><\/p>\n<p>\u00a0<span style=\"font-weight: 400;\">Versatile spice it can be used both to enhance flavors and colors in dishes.<\/span><\/p>\n[\/et_pb_text][\/et_pb_column][\/et_pb_row][\/et_pb_section]\n","protected":false},"excerpt":{"rendered":"<p>Saffron: a precious spice used and praised for its virtues since ancient times.
